Learn how to cook with cornmeal by making a baked Mamaliga, Romanian cornmeal bread using an unusual technique. Along the way, we will chat about how many polenta variations you can create from a basic recipe, about the history of corn in Romania, and the Ottoman influence in our cuisine.

We will make a Mushroom Ciulama - a recipe that comes together very quickly and is traditionally served alongside cornmeal bread or mush. They go particularly well together. The sauce involves a sour cream sauce, smatana, combined with garlic, which is a key ingredient in this dish.

For dessert, we will make a light yoghurt plum cake, which is the basic recipe for many other versions using different fruit, depending on what is in season when you make it.

To recap, we will make:

  1. A Romanian cornmeal bread.
  2. Mushroom Ciulama with sour cream, garlic and parsley.
  3. Plum cake

Diets and preferences: The course is vegetarian but not suitable for vegan, dairy free, gluten free or for those who don't like garlic or mushrooms.

The course will be held on Zoom and you will receive a recording of the class valid for 10 days. Closer to the date, you will receive all the recipes and instructions and a link to the class on zoom.
